Josh's Shrimp or Crawfish Boil •4 quarts water • 8 lemons, halved • 3 onions, quartered • 2 cloves garlic, chopped • 3 tablespoons Worcestershire sauce • 1 celery stalk, chopped • 3 cups sauterne or white wine • 2 tablespoon cayenne red pepper • 9 tablespoons salt (for shrimp) or 11 tablespoons salt (for crawfish) • 5 pounds raw shrimp or crawfish Bring water to a boil in a pot with a lid. Add all ingredients, except shellfish. Stir, cover, and return to boil. Add shellfish, cover and cook approximately 15 to 20 minutes.

Creamy Orange White Chocolate Fudge - A Free Recipe from Georgia Hometown Cookbook 888-854-5954

2 pounds white chocolate, melted 2 (8-ounce) packages cream cheese 6 cups powdered sugar 1½ tablespoons orange juice 1 tablespoon flour 1 cup chopped nuts, optional Combine all ingredients; spoon into mini muffin/candy cups. Top with chopped nuts, if desired. Chill to set. Author's Note: To create a pretty, marbled fudge, withhold 1/2 cup mixture after combining all ingredients. Drop orange (or red and yellow) food coloring into mixture to desired color. Spread white mixture in buttered pan. Spoon orange mixture on top then use a knife to gently marble the orange mixture into the white mixture. Easy Crawfish Etouffee •1 1/2 cups chopped onions • 1 cup chopped bell pepper •1 cup chopped celery •2 cloves garlic •1 1/2 sticks butter •1 can cream of celery soup •1 can Rotel tomatoes (chopped tomatoes with chilies) •2 pounds crawfish tails •Salt and pepper Saute onion, bell pepper, celery and garlic in butter. Add soup, tomatoes and crawfish. Cover and simmer about 30 minutes. Season with salt and pepper to taste. Add water as needed if sauce is too thick. Serve over cooked rice. Mrs. Jake Moody, Eunice

Chocolate Fudge Cake - A Free Southern Recipe from Great American Cookbooks 888-854-5954

A slice of this cake and a glass milk is heaven. Yellow cake mix plus ingredients to prepare per box 1 cup margarine 3 cups sugar 2/3 cup milk 1 (12-ounce) bag semisweet chocolate chips Prepare cake in 3 (8-inch) layers according to directions on box. Cool; split each layer to create 6 layers. In a heavy saucepan, bring margarine, sugar, and milk to full rolling boil. Boil 2 minutes stirring constantly. Remove from heat and add chocolate chips; stir briskly until chocolate is melted. Continue to beat with spoon until icing is thick and has lost most of the shine. Place 1 layer on plate and pour icing over top; repeat with 4 more layers. Place last layer on top and pour remaining icing over top allowing it to drip over sides.
