Josh's Shrimp or Crawfish Boil •4 quarts water • 8 lemons, halved • 3 onions, quartered • 2 cloves garlic, chopped • 3 tablespoons Worcestershire sauce • 1 celery stalk, chopped • 3 cups sauterne or white wine • 2 tablespoon cayenne red pepper • 9 tablespoons salt (for shrimp) or 11 tablespoons salt (for crawfish) • 5 pounds raw shrimp or crawfish Bring water to a boil in a pot with a lid. Add all ingredients, except shellfish. Stir, cover, and return to boil. Add shellfish, cover and cook approximately 15 to 20 minutes.
